Having graduated from engineering school, Romain Malhere was destined for a career in aviation. Unlike Alfred, he didn’t finally join the army. It was on the oil rigs off the Philippines that he did his training. Back in his native Normandy between two missions, he was called to the rescue on August 15 at Cabourg’s Hasting’s brasserie. He came out of the day on his kneecaps, but enthralled by the human contact he discovered, whether with customers or the team he accompanied at short notice.
The first day becomes a fortnight’s seasonal work, which in turn turns into a full season the following summer… Romain is hooked – he’s got his finger on the pulse of the restaurant business! After scouring the finest brasseries on the Normandy coast, he found true love and took a sabbatical in Australia. A few weeks became months. They would finally spend three years there, hopping from Airbnb to Airbnb to find lodgings and continuing his apprenticeship in the restaurant business to support themselves.
Three days after his hurried return to France, he was serving a group of 380 people at Le Central in Trouville! He immediately became hooked on the adrenalin generated by the frenetic pace of such an institution. But Romain is an entrepreneur at heart, and is looking to set up his own business. Rather than a restaurant, fate would have it that he fell in love with Alfred’s project, to which he would bring his managerial and organizational skills.
